The restaurant minimizes its organic waste by implementing different food preparation methods, from cooking through parching to fermentation of peels, seeds or leftover fruits and vegetables. Handmade plates by the cooks or second-life dishes put together with a kintsugi method give the restaurant the craft savour. Chef & the Artisan
The basis of the Artisan concept is fermentation, which is essential not only from the point of view of reducing organic waste but also has beneficial effects on human health, and it also creates new tastes and thus enriches the food served to our guests. The team of chefs processes seasonal ingredients and keeps their stock for the following months. As soon as the restaurant opens, a professional cultivator with very gentle water consumption is installed, so it grows home-grown herbs, which guests can cut themselves and flavour the dish according to their preference. Fermentation creates, among other things, an unmistakable taste, so guests of Artisan have the opportunity to taste the original author's dishes that they cannot find elsewhere. Chef David Rejhon also develops several other activities. His latest project is the installation of three beehives on the hotel's roof.

Every Thursday evening, you can taste the specialties of the restaurant's new evening concept. You can enjoy "live" cooking in an open "theatre" kitchen, an interactive service where you will learn more about the individual dishes and ingredients used.
